Definitely not to early to trim. I'm not sure "on the plant" is too early to trim.

Five days is a little quick, for drying. But I think if you let it cure  for a while, it'll be fine. A longer cure oughta offset any harshness from the speedy dry.

Be warned, you may get that "hay" smell with a fast dry.
