What do you think you lost and gained by cutting it early? I have a Mandarin Cookies I am in the same situation with, for me it needs 2 more weeks but because its supposed to rain indefinitely I pulled it into the garage. Should I hang a light over it or just go ahead and chop it?  its probably 70% milky and the rest clear.
