Coconut Almond Macaroons

1. 3/4 cup granulated sugar.
2. 2 large egg whites.
3. 2 cups shredded coconut.
4. 2/3 cup chopped almonds.
5. 5 TB. plus 1 tsp canna coconut oil, melted.
6. 2 tsp. vanilla extract.
7. 1/2 tsp. almond extract.
8. 1 pinch salt

1. Heat oven to 340F. Line 2 baking sheets with parchment paper and set aside.
2. In a large bowl, whisk together sugar and egg whites until semi-stiff peaks form. Mixture should have the consistency of marshmallow cream.
3. Add shredded coconut, chopped almonds, canna-coconut oil, vanilla extract, almond extract and salt, mix well.
4. Place scoops of mixture 2 inches apart on the baking sheets.
5. Bake for 15 to 17 minutes or until golden brown and set.
